Immune Boost: Sweet Potato Soup

Looking for a recipe to nourish your immune system? Or just a tasty soup recipe to add to your repertoire?  Here is a delicious sweet potato soup recipe that requires little prep and is packed with vitamins and minerals to keep your immune system functioning at tip top shape.  Beta carotene is the main immune boosting vitamin in this recipe, a precursor to vitamin A, which is commonly known as the anti-infection vitamin, because it is required for normal functioning of the immune system.

Bonus? Vitamin A is also critical for maintaining the integrity of your skin (all skin, inside and out!) – what does that mean? This soup is also a beauty food! Enjoy.

Slow cooker sweet potato soup:

Ingredients:
3 large sweet potatoes diced
1 can coconut milk
1 tbsp honey
1 cup chicken stock
1 can pumpkin
1 tsp salt
1 tsp ground ginger
1 tsp fresh grated ginger
1 bay leaf
Dash cayenne
1/2 tsp paprika
1/4 tsp cinnamon
1/4 tsp cloves

Directions:

Add all to slow cooker and cook on low for 4-6 hours. Take a potato masher and mash potatoes until soup is thick (or blend).

No slow cooker? Add all to a pot and cover, cook until sweet potatoes are easy to blend.
